Simple Spelt Soda Bread


  • 4 cups whole spelt flour

  • 1 tsp baking soda

  • 1 tsp salt*

  • 1 3/4 cups buttermilk

Mix dry ingredients, whisking together

Add buttermilk and mix to form a dough

Turn out onto a floured surface and knead slightly - careful not to over work, as spelt quickly gets tough

Place in a greased cake pan, cut an X in the top and covered with buttered foil

Bake at 425F for 30 minutes covered

Uncover and bake for another 15 minutes

Turn out and serve warm with butter

Possible Additions:

*For a sweet breakfast bread; switch out the salt for sugar, honey or maple syrup, add 1 tsp cinnamon, a 1/4 cup each of dried fruit and walnuts.

Add 1/4 cup mixed seeds to the dry ingredients

Add 1/4 cup cheddar cheese and 1 tsp dried herbs of your choice
